Penne Alla Vodka

Recipe Ingredients
o    1 box (14.5 oz) penne rigate (Ronzoni Smart Taste)
o    1⁄2 cup frozen peas
o    1 1⁄2 tsp olive oil
o    1⁄3 cup chopped shallots
o    1⁄4 cup vodka
o    2 cups marinara sauce
o    4 oz fat-free cream cheese, broken into chunks
Recipe Preparation
1. Cook pasta in large pot of salted boiling water as box directs. Add peas just before draining pasta.
2. Meanwhile, heat olive oil in a medium
 saucepan shallots; cover and cook over medium heat 3 minutes.
3. Add vodka; boil until evaporated, about 2 minutes. Stir in marinara sauce; simmer 2 minutes to blend flavors.
4. Stir in cream cheese and cook, stirring until melted.
5. Drain pasta and peas. Return to pot; add sauce and gently toss to combine.
